Killer Baja Seafood Chile Rellenos

Don't these look fabulous? These rellenos were inspired by food we've eaten in Cabo San Lucas during one of the many trips our family has taken down into Baja. They are filled with scallops and shrimp, rice and cotija cheese and spiced up with cumin and cilantro. Yum!

Vegetarian, Anyone?

What do you do with leftover Tofurky? Well, make Curried Tofurky Orzo Salad with Cranberries and Almonds, of course! This recipe landed me an Apple iPhone. Thank you, Tofurky! As you may know, my husband is a vegetarian, so even though a lot of my recipes involve meat (I love it! ), I do occasionally experiment with vegetarian products. This recipe turned out so well, I've even made it with chicken and regular "real" turkey, as well. Enjoy!
